Pink gold in colour, the gin within was distilled on our Farm and has been combined with traditional Gin Botanicals. However, using a small amount of the leaves is acceptable and many foragers can still be spotted in Autumn collecting the fruits known as ‘Haws’ for syrups and jellies. However, in keeping with the tradition of appeasing the local fairies, a small cup of newly distilled spirit from each batch is left outside overnight at Tipperary Boutique Distillery for na Sí to enjoy first!

Gin is the quintessential Summer drink and it was important for us to produce a unique Gin that celebrated the land here in the Golden Vale. Hawthorn Trees are a permanent and ancient part of the landscape here and just like using our own barley, which is primarily grown for our whiskey, it’s important for us to create amazing drinks using quality native ingredients that grow right outside our door.

Tasting Notes: 

This is a sweet nutty gin which finishes on a pleasant and unique ‘green’ note. 

Mixed with traditional tonic, ice and citrus (e.g. lemon, lime, grapefruit) this makes for the perfectly crisp Gin and Tonic. However, Fairy Tree gin can be enjoyed with more unusual flavours like the floral, herby and fruity notes in Thomas Henry’s Botanical Tonic.

Tipperary Boutique Distillery have released their first gin, distilled on the family farm at Ballindoney, Grange, Clonmel, Co. Tipperary.

This farmhouse gin is distilled in Brigid (one of the copper pot stills) by Jennifer Nickerson, manager of Tipperary Boutique Distillery.

Gin recipes are prepared by Jennifer Nickerson’s mother in her kitchen on a tiny trial still, and Jennifer carefully scales these up and hand measures each botanical.

Every batch of Tipperary gin is unique, handcrafted with love in the boutique stillhouse.
