Nose:
Leading with summer fruits like raspberries, blackberries and dried fruits before being followed by woody hints of cigar smoke and leather.

Palate:
The palate delivers on this berry forwardness along with the succulence of dates, raisins and figs together with the savouriness of pepper.

Finish:
Long lasting – sweet and savoury – making it an excellent whiskey which belies its years.

Overall:
A really rich impactful spirit, yet it’s very approachable and won’t overwhelm someone who’s new to whiskey.

Home Grown Barley Single Malt Rioja Cask – Sake Finish

Colour

Deep red

Nose

Blackcurrants and red summer fruits. With water, dried fruits come to the fore.

Palate

Creamy red raspberries, strawberries, red currants and blackcurrants. Very fruity but not overpowering. With water there are creamy blackcurrants and dates, some black pepper and a hint of chilli.

Finish

Short medium sweet fruits. With water the length of the finish is longer and pleasantly very dry.

Home Grown Barley Single Malt Rioja Cask – Mezcal Finish

Pink Hue

Nose

Soft summer fruits with liquorice and aniseed notes. With water there are dried fruits coming through on the nose.

Palate

Lots of summer fruits, black pepper and a creamy liquorice note. With water there are dried fuits at the front, followed by black pepper and then the summer fruits come in with aniseed at the end. A whiskey that builds on layers, really interesting and a lovely dram.

Finish

Medium long sweet toffee with that hint of aniseed. With water you will get more flavours that are longer lasting

The essence of this whiskey lies in its unique terroir. Every detail – from the grain variety, planting times and soil conditions to the specific strain of barley used – plays a role in creating its distinctive flavour profile. The result is a true expression of our homegrown malted barley, a single estate ingredient that sets this whiskey apart.

Matured for 6 years in first-fill ex-Rioja barrels sourced from Bodegas Faustino, and then finished for 8 months in first-fill Port casks, this whiskey was aged in a traditional warehouse at Ballindoney Farm. With Tipperary’s mild climate and temperate winters, we enjoy the perfect conditions for creating an extraordinary Irish whiskey.

Our whiskey tells a distinctly Irish story, born from the land of Tipperary. With our heritage rooted in the farm and a commitment to single-estate production, this bottle offers a truly authentic local provenance. For discerning whiskey drinkers, it promises a rare and valuable experience.

Colour: Pinkish Gold
Nose: Soft fruits with a subtle savoury note
Palate: A burst of soft fruits, balanced with a touch of chilli pepper
Finish: The chili pepper lingers, with the fruit re-emerging at the end
Overall: A wonderful combination of stewed fruits and chili pepper, where the heat gradually gives way to the sweetness of the fruit, creating a fabulous and lasting finish.

Homegrown Barley Pot Still

It was aged in a first-fill ex-Rioja cask within a traditional warehouse on Ballindoney Farm. Tipperary’s mild climate and temperate winters provide the ideal conditions for producing a truly exceptional Irish whiskey.

Richly creamy with a peppery finish, this is a remarkable example of a classic Pot Still Irish whiskey.

Colour: Deep, rich dark red
Nose: Bright and vibrant, with a medley of green and red fruits, accented by hints of freshly toasted bread
Palate: Sweet and fruity, bursting with red fruits from the Rioja influence, beautifully balanced with toasted oak and tannic spiciness. The signature pot still character adds a distinctive oiliness that envelops the palate.
Finish: The fruit lingers on a medium-long finish, with a bold pepper spice kick that leaves a lasting impression.

Our whiskey was matured in first-fill Rioja casks in a traditional warehouse on Ballindoney farm. With Tipperary’s mild climate and temperate winters, we have the ideal conditions for an extraordinary Irish whiskey.

We tell a uniquely Irish story. We have true heritage from our farm in Tipperary, embodied in our homegrown, single estate whiskey. This authentic local provenance will provide a uniquely valuable experience to sophisticated, knowledgeable whiskey drinkers.

Nose: Summer fruit pie, warm from the oven
Palate: Sweet and fruity, lots of juicy fruits from the Rioja influence, balanced with toasted oak and black pepper.
Finish: Dry with copper, spice and malty oak

Seen by both Nickerson and McGuane as a celebration of the strength, innovation, and resilience of women in the whiskey world, the new blend is a testament to the dedication of their craft and brings together sherry-aged malts from J.J. Corry’s Flavour Library and home grown spirits matured in Rioja oak casks from Tipperary Boutique Distillery.

The Big Field Poitin

With over 40 years experience of distilling some of the world’s best loved Scotch whiskies, Stuart attributes the future success of smaller and younger distillers to the encouragement of well established Distillers such as these. “Good grace is paramount in the Whiskey/ Whisky community, both in Ireland and the rest of the world. It was an honour to use another Distiller’s stills for this production and we are very grateful for their encouragement and their help at this time.”

Tasting Notes:

The Spirit has a ‘grassy’ nose with savoury notes at the back. On tasting, it is surprisingly sweet at the front, with lots of barley sugar and black sugar along the tongue. The finish is short but leaves a lingering sweetness.
