Description

This whiskey was distilled at another Irish distillery under Stuart Nickerson’s expert supervision, to exacting distillation standards.

The main focus is on our unique terroir, from the barley being grown to maturation in our own warehouse through to reducing to bottling strength with our own water and bottling here on the farm with our own hands. The grain type, strain, planting time and conditions, soil elements, etc are all detailed and available via a label QR code to our customers, emphasising the distinctive components of our single raw ingredient: homegrown malted barley.

The rest of this whiskey is currently maturing in a traditional warehouse on Ballindoney farm, With Tipperary’s mild climate and temperate winters, we have the ideal conditions for an extraordinary Irish whiskey.

Tipperary Homegrown Barley Single Malt Whiskey – Batch 2

This second batch of homegrown barley whiskey was limited to just 2,000 bottles. Aged entirely in first-fill ex-Rioja casks, this homegrown barley whiskey was distilled from barley grown on our land, matured in a traditional farm shed right beside our farmhouse and bottled at 50% abv.

The cask was sourced from Bodegas Faustino in Spain and was previously used to age Rioja wine. This was the second longer batch of our homegrown barley whiskey to be bottled onsite at Tipperary Distillery, hand-bottled by our team.

The nose immediately gives an abundance of soft fruits, almost a Victoria sponge sensation with strawberry and raspberry notes and hints of dried grass. The palate compliments this, deep and round with raspberry notes and hints of toasted marshmallow. The finish is medium-long, surprisingly robust for its age.
